Some days you just crave warm comfort food. You know, something with a lot of flavor that warms you from the inside out but doesn’t require a lot of time or effort to prepare. Here’s your answer. This quick and easy Kickin’ Chili Pumpkin Soup took me longer to clean-up than it did to actually prepare. Hope you like it!
Ingredients:
- 2 TB Extra virgin olive oil or coconut oil
- 3 cloves garlic, minced
- 1 onion, minced
- 28 oz can pumpkin
- 14 oz can coconut milk
- 3 c chicken or vegetable broth
- 1 TB herbs de Provence
- 1-2 TB Chili powder (or more for added heat)
- 1 Bay leaf
- Salt and pepper to taste
Recipe:
- Place oil in a pot over medium heat. Add garlic and onion and cook about 2 minutes.
- Add remaining ingredients and stir to combine. Cook until soup simmers.
- Recipe also works well in a crock pot.
