Ingredients:
1 c unsweetened almond milk
2 eggs
1 large ripe banana
1 tsp pure vanilla extract
1 tsp baking powder
1/2 tsp cinnamon
1 dash sea salt
2 c old-fashioned rolled oats
1/2 tsp extra virgin coconut oil
3 c assorted mixed berries
Preparation:
- Place almond milk, eggs, banana, extract, baking powder, cinnamon, salt and oats in a blender. Blend until smooth.
- Heat oil in non stick pan over medium heat.
- Pour 1/4 c batter onto the pan and cook 2-3 minutes or until bubbles form around the edges. Flip and cook for another 90 seconds.
- Serve with fresh berries.
Container count:
2 pancakes = 1 yellow 1/2 purple
