Ingredients:
Makes 1 serving
1 4oz Chicken Breast, raw
Dash ground black pepper, sea salt and garlic powder (not garlic salt)
1/2 tsp olive oil
2 tsp prepared pesto sauce
2 thick slices fresh tomato
2-3 fresh basil leaves
1 oz slice fresh mozzarella
dash sea salt
dash ground black pepper
4 tsp balsamic vinegar
Recipe:
Season both sides of chicken breast with salt, pepper and garlic powder.
Heat oil in nonstick skillet over medium heat
Add chicken and cook for 3 – 4 minutes on each side, or until no longer pink in the middle.
Top chicken with basil leaves, sliced tomato, pesto and fresh mozzarella.
Reduce heat to low and cook, covered, for another 1 – 2 minutes pr until cheese is melted and tomatoes are softened.
