Ingredients:
6 Large eggs, beaten
1/4 teaspoon sea salt
1/2 c shredded Parmesan cheese or grated aged Parmesan
1/4 c parsley, chopped
1/2 small onion, chopped
1 c ground turkey or turkey sausage
1/2 c sliced red bell pepper (or other vegetables)
1/2 c sliced zucchini (or other vegetables)
1 tsp olive oil
Recipe:
- Preheat oven to 350°
- Combine Eggs, salt, cheese and parsley in a mixing bowl and whisk well
- Place olive oil in a non stick skillet over medium heat. Add onion and cook until translucent (about 5 minutes)
- Add turkey and cook until meat is browned (about 5 minutes)
- Add peppers and zucchini,
or vegetables and cook for another 2 minutes. - Pour egg mixture into skillet and cook for 4-5 minutes or until eggs are set around edges.
- Place skillet in the oven for approximately 5 – 10 minutes until eggs have set completely.
