Here’s a great way to make sure you get enough veggies in your diet every day. This Microgreen salad is packed with nutrients. Do yourself a favor and buy prepackaged greens, then simply clean, slice and mix your greens and veggies in one big batch ahead of time. Simply portion the salad out and store it in separate ziplock bags to have on hand as you need it. You can top it with left over chicken, shrimp or steak, or add other things to it like olives, cheese and beets to give it a different flavor.
Ingredients (Makes one serving):
3 c baby salad greens
1/4 medium carrot, shredded
1/2 cucumber, chopped
1/2 red bell pepper sliced
1/4 c sprouts (like radish, alfalfa, or broccoli)
1/2 medium tomato (or 6 grape tomatoes)
1/4 c jicama, chopped
1 TB fresh cilantro, chopped
Preparation:
Combine all ingredients in a large bowl and toss well. Store in an air tight container or ziplock bag in refrigerator.
