Guacamole
Guacamole dates back to the 1500’s in Mexico when the Aztec empire mixed avocados with just salt and lemon or lime juice. “Ahuaca-mulli,” as they called it, means avocado mixture or avocado sauce. Over the years, the tasty side dish has been enhanced with things like chilies, cilantro, onions and tomatoes. Guacamole is not only easy to make, but it’s loaded with protein making it the perfect, guilt-free healthy snack!
How do you know if an avocado is ripe?
Take this test:
- If you press on the stem of the avocado and it does not easily fall off, it’s not ripe.
- Press on the stem of the avocado and it falls off easily and it’s brown underneath, it’s over-ripe.
- If the stem of the avocado falls off easily and it’s light yellow/tan underneath, it’s just right!

Ingredients
For the guacamole
- 2 avocados cut in half and remove seed
- 1/2 cup fresh salsa organic, store bought or homemade
- 1/2 lime juiced
- 2 Tb extra virgin olive oil
- salt & pepper to taste (optional)
For the chips
- 6-8 corn or flour tortillas
- 2 Tb extra virgin olive oil
- 1/2 lime juiced
- sea salt to taste

Instructions
To make the guacamole
- Remove avocado flesh and chop or mash to desired texture.
- In a medium bowl, add avocado and remaining ingredients and mix well.
- Serve with homemade chips.
To make the chips
- Pre-heat oven to 375°
- In a small bowl combine extra virgin olive oil and lime juice.
- Using a pastry brush, lightly coat the front and back of each tortilla with the olive oil mixture.
- Sprinkle each tortilla with sea salt and cut into several wedges.
- Place tortillas wedges on a baking sheet and bake for 10-12 minutes, or edges start to roll and they become crisp.
- Remove from oven and serve warm with salsa or guacamole.
