Fattoush is a middle-eastern salad made from fresh garden vegetables and a light citrus and herb dressing. Traditional fattoush combined fried pieces of Arabic flat bread with the vegetables, but you could substitute croutons or just omit them to suit your taste. Parsley and mint give this salad it’s distinct taste.
This salad is so simple and takes just minutes to make. Serve this at your next party for an alternative to leaf lettuce salad. For the best flavor, use fresh garden-grown vegetables.

Ingredients
- 2 large Tomatoes chopped
- 2 medium Cucumber sliced
- 1 medium Red Onion sliced thin
- 1 clove garlic minced
- 2 tsp Dried mint
- 1 Tb Dried parsely
- 1 Lemon juiced
- 2 Tb Red wine vinegar
- 6 Tb extra virgin olive oil
- Salt and pepper to taste

Instructions
- Slice tomatoes, cucumbers and red onion and toss together in a large bowl.
- Add remaining ingredients to the bowl and toss well to combine.
- Place in refrigerator for half an hour before serving.
