- 1 2lb Pork Loin
- 1 Tb Honey
- 1 Tb Dijon Mustard
- 1/4 C Chopped fresh herbs such as rosemary, parsley, thyme and sage
- 1/4 C Pistachios Shelled and chopped fine

Instructions
- Preheat oven to 400°
- Place pork loin in a greased roasting pan.
- Mix honey and dijon mustard together in a small bowl. Using a pastry brush, coat the top of the pork loin with the honey mustard mix.
- Mix chopped herbs and chopped pistachios together in a small bowl. Apply a thick coating of herb/nut mixture to the top and sides of pork loin.
- Place coated pork loin in oven and bake at 400° for 10 minutes
- Reduce temperature to 350° and bake for an additional 20 minutes per pound or until internal temperature reaches 160°
