Chopped fresh herbs
such as rosemary, parsley, thyme and sage

Pistachios
Shelled and chopped fine
Instructions
Preheat oven to 400°
Place pork loin in a greased roasting pan.
Mix honey and dijon mustard together in a small bowl. Using a pastry brush, coat the top of the pork loin with the honey mustard mix.
Mix chopped herbs and chopped pistachios together in a small bowl. Apply a thick coating of herb/nut mixture to the top and sides of pork loin.
Place coated pork loin in oven and bake at 400° for 10 minutes
Reduce temperature to 350° and bake for an additional 20 minutes per pound or until internal temperature reaches 160°
